Delicious Christmas Cookies!

While enjoying the snow and Christmas spirit, Where could you go wrong with some delicious holiday cookies? So I have looked into some cookbooks and these sound promising! (And mouth watering!)

 Chocolate Chocolate Chip Cookies :

1 cup butter, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips

How to:
– Preheat oven to 350 degrees.
– In large bowl, beat butter, sugar, eggs, and vanilla.
– Combine the flour, cocoa, baking soda, and salt; stir into the
butter mixture until well blended.
– Mix in the chocolate chips.
– Drop by rounded teaspoonfuls onto ungreased cookie sheets.
– Bake for 8 minutes in the preheated oven, or just until set. Cool for one minute on the cookie sheets before removing to cool completely.

 Best Snicker doodles Ever :
- completely foolproof, and absolutely delicious -

1 stick plus 2 tbsp butter, softened
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
1 tsp cinnamon
2 3/4 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
4 tbsp (1/2 stick) melted butter
Additional white sugar and cinnamon for topping

How to:
– Preheat oven to 400 degrees F.
– Mix together one stick plus two tablespoons of butter, 1 1/2 cups sugar, eggs, cinnamon and the vanilla.
– Blend in the flour, cream of tartar, baking soda and salt.
– Add the melted butter and mix until incorporated (add a little extra flour if the dough is greasy).
– Mix the sugar and cinnamon for the topping in a separate small bowl.
– Roll tablespoon-sized balls of dough in the mixture.
– Coat a baking sheet with parchment paper or silipat, and place the balls about two inches apart. Press them down with your fingers to help them spread out.
– Sprinkle with additional cinnamon and sugar mixture.
– Bake for 8 minutes. Let them cook for one minute on the baking sheet, and then transfer to a wire rack to cool completely.

 Cream Cheese Delights:

1/2 cup margarine
1 pkg 3 ounce cream cheese
1/2 cup sugar
1 egg yolk
1 tsp vanilla
1 cup flour
1 tsp salt
halved maraschino cherries

How to:
– Cream margarine, cream cheese and sugar.
– Then add egg and vanilla.
– Combine flour salt gradually to the creamed mixture.
– Drop by tsp. Top each with a half of a cherry.
– Bake at 350% for 12-15 minutes.
Cool for one minute on the cookie sheets before removing to cool completely.
